Paneer is a great alternative main ingredient for curry. Shown here is the Misty Ricardo's Curry Kitchen Paneer Madras with some rogue spring onion as a garnish. Recipe: https://mistyricardo.com/madras-recipe/ You can buy paneer in all Asian supermarkets and some of the larger mainstream ones. If you haven't already tried it, please do so. Before adding it to a curry, cut it into cubes and shallow fry in a tiny bit of oil / salt, browning 3 or 4 of the sides. 😋 Madras recipe is from my Gourmand award winning Curry Compendium and Indian Restaurant Curry at Home Volume 1 cookbooks.
